Winemaking recipe: Plum Wine

The following ingredient quantities are based on 1 gallon(s) of wine being made.

Pectin destroying enzyme
Plums 6 pound(s) Red, black or yellow plums
Sugar 3 pound(s)
Tannin 3 drop(s)
Yeast nutrient
Yeast, all purpose

Instructions

To make plum wine…

  1. Wash the fruit thoroughly and drain it.
  2. Place the fruit in 1 gallon (4.5 litres) or boiling water and simmer it for 10 minutes, then transfer to a pail.
  3. Add the sugar, citric acid, tannin, a crushed Campden tablet and the pectin destroying enzyme. Stir until the sugar has dissolved. Leave for 24 hours, covered.
  4. Add the yeast and nutrient, stir well, cover the pail and stand it in a warm place, stirring daily.
  5. After three days, strain into a fermentation vessel and fit an airlock.
  6. When fermentation is complete, rack the wine into a container, add one crushed Campden tablet and close it with a bung or safety lock.
  7. Rack every two moths until clear
