Winemaking recipe: Damson plum wine
This is a personal favorite. As the name suggests damson plums are a cross breed of these two fruits, one which makes a good dry red and are ripe in the UK in September/ October.

Instructions
To make damsom plum wine…
- Wash the fruit gently and drain it.
- Put the fruit in a pail and pour over 0.25 gallon (1.14 litres) of boiling water.
- Add 1lb (454g) of sugar and the citric acid. Stir unti lthe sugar has dissolved and break up the fruit with a large spoon.
- Add an additional 0.5 gallon (2.3 litres) of warm water, then add the pectub destroyoing enzyme; cover the pain and stand it in a warm place, stirring daily.
- Aftr two days, strain it into a demi-john, then dissolve 1.5lb (681g) of sugar in hot water and add this to the vessel.
- Add the yeast and nutrient, then make up to 1 gallon (4.5 litres) with warm water and seal the vessel with an airlock.
- When fermentation is complete, rack into a clean container, add one crushed Campden tablet and close the container with a bung or safety lock.
- Rack every two months until clear, then bottle and enjoy your plum damson wine at your leisure!
