Liquer/spirit recipe: Strawberry Liquer
Taste the essence of distilled stawberry! A nice balance of alcohol and fruit, this provides a delicious after-dinner drink.

Impotant: Only clean, ripe, but perfectly unblemished fruit with stalks removed should be used. |

Instructions
- Mash the strawberries in a bowl, then stir in the sugar and leave to stand for an hour.
- Add vodka, water, orange zest, lemon zest and juice. Now store thoroughly.
- Put in an airtight container and place in a cool, dark place for 2 days. Shake several times.
- Now strain off the fruit with a fine mesh into another airtight container and again put in a cool dark place to allow the remining liquor to settle.
- Finally rack off to remove all sediment and leave the finished liquer in a sealed bottle.
- Mature for 4-6 weeks. Taste and add more sugar to taste if required, shaking for a day or two to dissolve and then leaving to mature a little more each time.
