Liquer/spirit recipe: Raspberry Schnapps

Raspberry schnapps can be used as a cocktail ingredient but is often best served straight over ice. Clean, crisp, fruity liquers don't come much better than this!

The following ingredient quantities are based on 1 litre(s) of spirit being made.

raspberries 250 gram(s)
sugar 30 gram(s) castor easiest
Vodka 0.75 litre(s) non-flavoured

Instructions

  1. Carefully rinse the raspberries well and removing any damaged or decaying fruits. Allow to dry naturally. (If using frozen fruit no need to rinse).
  2. Add/divide the fruit into wide necked cappable one litre container(s), simply then add the sugar and vodka until all the fruit is covered.
  3. Apply cap and then give the bottle a gentle shake (regularly repeat this for the first few days until all sugar is dissolved).
  4. Now allow to mature in a cool, dark place for 3 months.
  5. Feel free to add more sugar to taste at a later point and strain to separate the fruit from the drink if maturing for more than 6 months.
