Liquer/spirit recipe: Raspberry Schnapps
Raspberry schnapps can be used as a cocktail ingredient but is often best served straight over ice. Clean, crisp, fruity liquers don't come much better than this!

Instructions
- Carefully rinse the raspberries well and removing any damaged or decaying fruits. Allow to dry naturally. (If using frozen fruit no need to rinse).
- Add/divide the fruit into wide necked cappable one litre container(s), simply then add the sugar and vodka until all the fruit is covered.
- Apply cap and then give the bottle a gentle shake (regularly repeat this for the first few days until all sugar is dissolved).
- Now allow to mature in a cool, dark place for 3 months.
- Feel free to add more sugar to taste at a later point and strain to separate the fruit from the drink if maturing for more than 6 months.
