Liquer/spirit recipe: Peach Liquer
A thick sweet aromatic peach liquer that can very adequately take the place of an after dinner desert wine.

Instructions
As always it's best to use ripe fruit in season if you can get it but avoid fruit not properly
ripened as the flavour will not be forthcoming. You could probably equally
use drained and rinsed tinned fruit if out of season.
- Peel and cut the peaches into quarters.
- Wash the lemon and use a potato peeler to get 5-6 strips of peel.
- Add the vodka, lemon peel and spices to a wide necked bottle or jar (that
is cappable & airtight).
- Add the peaches and fix the lid.
- Store in a cool dark place for 1-2 weeks, shaking every couple of days.
- Strain fruit, squeezing as much juice as possible (pour through a straining
bag if you have one) and set aside the fruit residue.
- Now make a sugar syrup. Heat one third of the water and dissolve the sugar
into it. Allow to cool before using.
- Add sugar syrup and re-store for a further 5-6 weeks.
