Liquer/spirit recipe: Damson Gin
Add sloes to gin to create a clean, fresh and lovely flavour. Simply for many one of the best fruit liqueurs you'll taste.

Instructions
To make damson gin…
- Rinse the damsons well and remove any damaged or decaying fruits. Gently
pierce the surface of the damsons with a fork and place equivalent amount of damsons in 1 litre
bottle… one litre bottle for every 75cl of gin. If you can find a broad necked bottles/ containers this is best as the
post-drink boozy pudding you'll be abel to make is simply divine too!
- Pitch in the sugar and add the gin until all fruit are covered.
- Give the bottle a good shake (regularly repeat this for the first week
until all sugar is dissolved).
- Now allow to mature in a cool, dark place. In the UK damsons are usually ripe
in September / October making it ready for drinking by Christmas but leaving
it even longer will only help blend and better define the flavour.
- Feel free to add more sugar to taste at a later point and strain to separate
the fruit from the drink if maturing your damson gin for more than 6 months (NB Don't waste
the fruit though make an adults boozy damson crumble with it, just devine,
but make sure those with a hearty appetite don't drive afterwards!)
